Miwa Yamamoto, a renowned noodle specialty shop has over 300 years of history

produces these somen with 36 hours of dedication and care using a hand stretching-method

that's been passed down from generation to generation for over 1300 years.

Under the cold weather which is perfect for noodle-making,

these somen are made with Miwa Yamamoto's original recipe with carefully selected flower.

<Three pillars of Miwa Yamamoto's handmade somen>

1. Thinness - Skilled somen makers use the hand stretching method,

which has been passed down for over 1300 years, goes through various

processes during the 36 hours of somen making.

2. Safety - The high quality of Miwa Yamamoto's somen is a result of

select ingredients and vigorous quality control.

Only the best quality flower and salt are used and the somen has to

pass the evaluation with over 30 items.

3. Springiness - Miwa Yamamoto's somen has characteristic springiness and chewiness

thanks to the ideal weather during fall and winter.

Also, somen's thinness is a testament to its quality.

Only the skilled craftsmen of somen making can produce such thin somen and needless to say,

they cannot be produced by mass production.
